Herbal Soup
A soothing and flavorful soup made with poached herbs and a hint of herbal spices.
Ingredients
- β2 cups poached herbsany combination of herbs like parsley, thyme, and rosemary
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 medium carrotschopped
- β2 stalks celerychopped
- β4 cups chicken brothlow sodium
- β1 tsp herbal spicesdried thyme and rosemary
Instructions

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add the chopped onion and cook for 3-4 minutes until softened.

Add the minced garlic and cook for another minute.

Add the chopped carrots and celery and cook for 5 minutes.

Pour in the chicken broth and bring to a boil.

Reduce the heat to low and add the poached herbs and herbal spices.

Simmer for 15-20 minutes until the vegetables are tender.

Use an immersion blender to puree the soup until smooth.

Season with salt and pepper to taste.
