Pan-Seared Pike with Russian Pilaf
A keto-friendly dish that combines the delicate flavors of pan-seared pike with a side of nutty Russian pilaf.
Ingredients

- β4 tablespoons butter

- βto taste pepper
- β1 cup Russian pilafstore-bought or homemade
- β1/4 cup chopped scallions

Preheat oven to 400Β°F (200Β°C).

Season the pike fillets with salt and pepper.

Heat 2 tablespoons of butter in an oven-safe skillet over medium-high heat. Add the pike fillets and sear for 2-3 minutes on each side.

Transfer the skillet to the preheated oven and bake for 8-10 minutes or until the fish is cooked through.

While the fish is cooking, heat the remaining 2 tablespoons of butter in a separate pan over medium heat.
