Norwegian Cookies
A traditional Norwegian cookie recipe with butter, sugar, and cardamom.
Ingredients

- β3/4 cup sugar
- β2 1/4 cups all-purpose flour
- β1 teaspoon ground cardamom
- β1 teaspoon vanilla extract
- β2 large eggs
- β1/2 teaspoon salt

Preheat the oven to 375Β°F (190Β°C).

Whisk together the butter and sugar until light and fluffy.

Add the flour, cardamom, and vanilla extract to the butter mixture. Whisk until just combined.

Beat in the eggs until smooth.

Use a cookie scoop or spoon to drop rounded balls of dough onto a baking sheet lined with parchment paper.

Leave about 2 inches of space between each cookie.

Bake for 10-12 minutes, or until lightly golden.
