Mexican Paella
A classic Mexican-inspired dish made with savory seafood and spices, cooked to perfection in a flavorful paella.
Ingredients
- β1 cup Paella rice
- β1 cup shredded Mexican cheese
- β1 pound Shrimppeeled and deveined
- β1 pound Musselsscrubbed and debearded
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 tablespoons Tomato paste
- β1 teaspoon Cumin
- β1 teaspoon Chili powder
- βto taste Salt
- βto taste Black pepper
Instructions

Heat oil in a paella pan over medium-high heat.

Add onion and garlic and cook until softened, about 5 minutes.

Add shrimp and mussels and cook until pink, about 2-3 minutes.

Add paella rice and stir to coat with oil and mix with seafood.

Add tomato paste, cumin, chili powder, salt, and pepper. Stir to combine.

Add 2 cups of water and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until rice is tender.

Stir in Mexican cheese and cook until melted and bubbly.
