Braised Lamb Stew
A hearty and flavorful portuguese-inspired stew made with tender lamb and rich braising liquid.
Ingredients
- β1.5 pounds lamb shouldercut into 2-inch pieces
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup red winedry
- β2 cups beef brothhomemade or store-bought
- β2 tablespoons tomato pasteoptional
- β2 bay leavesfresh or dried
- β1 tablespoon thymefresh or dried
- β1 teaspoon pungentsuch as paprika or cumin
- βto taste saltoptional
- βto taste black pepperoptional
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Sear lamb until browned on all sides, about 5 minutes.

Remove lamb and set aside.

Add onion and garlic to pot and cook until softened, about 5 minutes.

Add red wine and beef broth, scraping up browned bits from bottom of pot.

Add tomato paste, bay leaves, thyme, and pungent. Stir to combine.

Return lamb to pot and bring to a boil.

Cover pot and transfer to preheated oven.

Braise lamb until tender, about 2 1/2 hours.

Season with salt and pepper to taste.

Serve hot, garnished with fresh herbs if desired.
