Hyderabadi Kale Pakora
Crispy fritters made with kale and a blend of Indian spices. A classic Hyderabadi street food.
Ingredients
- β2 cups, chopped Kalecurly or lacinato work well
- β2 tsp Indian Pungent Spice Blendor to taste
- β1 tsp Hyderabadi Spice Blendadjust to taste
- β1 cup Gram Flouralso known as chickpea flour
- β1/2 cup, finely chopped Onionoptional
- β1/4 cup, grated Gingeroptional
- β3 cloves, minced Garlicoptional
- β2 tbsp Lemon Juicefor serving
- β1 cup, for frying Oil

1. In a large bowl, combine kale, Indian Pungent Spice Blend, Hyderabadi Spice Blend, and a pinch of salt. Mix well.

2. Add gram flour, onion, ginger, and garlic (if using) to the bowl. Mix until a thick batter forms.

3. Heat oil in a deep frying pan over medium-high heat.

4. Using a spoon, drop small portions of the kale mixture into the hot oil, flattening them slightly.

5. Fry until golden brown, about 3-4 minutes.

6. Drain on paper towels and serve hot with lemon juice.
