French-Style Risotto with Beans
A creamy, flavorful risotto dish with a twist of French cuisine, featuring beans for added protein and fiber.
Ingredients
- ●1 cup Pungent Italian risotto rice
- ●1 cup, drained and rinsed White beans (such as cannellini)
- ●2 tablespoons Olive oil
- ●1 medium, finely chopped Onion
- ●2 cloves, minced Garlic
- ●1/4 cup White wine (optional)
- ●4 cups Vegetable broth, warmed
- ●1/2 cup Grated Parmesan cheese
- ●2 tablespoons Fresh parsley, chopped

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and cook for another minute.

Add the pungent Italian risotto rice and cook, stirring constantly, for 1-2 minutes.

If using white wine, add it to the skillet and cook until the liquid is almost completely absorbed, stirring constantly.

Add 1/2 cup of warmed vegetable broth to the skillet and cook, stirring constantly, until the liquid is mostly absorbed.

Repeat the process of adding the broth in 1/2 cup increments, stirring constantly and allowing each portion to be absorbed before adding the next, until the rice is cooked and creamy, about 20-25 minutes.

Stir in the cooked white beans, Parmesan cheese, and chopped parsley.

Season the risotto with salt and pepper to taste.
