Thai-Style Pan-Seared Tofu with Kanom Krok

Ingredients
- β1 block (14 oz) Extra-firm tofudrained and cut into 1-inch cubes
- β1 package (makes 12-15 krakraks) Kanom krok batter mixfollow package instructions for water ratio
- β2 cups Vegetable oilfor pan-frying
- β2 tablespoons Thai red curry pasteadjust to taste
- β1 tablespoon Fish sauceoptional (omission recommended for pescatarian diets)
- β1 tablespoon Palm sugaror brown sugar
- β1/4 cup Chopped cilantrofor garnish
- β2-3 Thai chili pepperssliced or minced for added heat

1. Prepare kanom krok according to package instructions.

2. Pan-fry tofu cubes in 1 cup of vegetable oil until golden brown, about 3-4 minutes per side.

3. In a small saucepan, combine Thai red curry paste, fish sauce (if using), palm sugar, and 2 tablespoons of water. Heat over low heat, whisking until smooth.

4. Add pan-fried tofu to the sauce and stir to coat.

5. Serve tofu with a side of kanom krok, garnished with chopped cilantro and sliced Thai chili peppers.
