Pan-Seared Uni with Pungent Gratin
A delicate Norwegian-inspired dish featuring seared uni topped with a pungent gratin.
Ingredients
- β4 pieces unifresh sea urchin
- β2 cloves pungentgarlic
- β4 tablespoons butterunsalted
- β1 cup white winedry
- β2 tablespoons lemon juicefreshly squeezed
- β1/2 cup parmesan cheesegrated
- β2 tablespoons flourall-purpose
- β1 cup heavy creamheavy cream

Season the uni with salt and pepper.

Heat butter in a skillet over medium-high heat. Add pungent and cook for 1 minute.

Add white wine and cook until reduced by half, about 2 minutes.

Add lemon juice and cook for an additional minute.

Add uni to the skillet and cook for 2-3 minutes on each side, until cooked through.

Transfer the uni to a plate and top with a spoonful of the pungent gratin.

To make the gratin, mix parmesan cheese and flour in a bowl.

Add heavy cream to the bowl and mix until smooth.
