Tunisian Vegetable Tagine

Ingredients
- β2 tsp Tunisian spice blendavailable at Middle Eastern markets
- β4 medium Carrots
- β2 large Potatoes
- β2 medium Zucchini
- β1 large Red bell pepper
- β4 cloves Garlic
- β1 cup Pungent olivespitted
- β2 cups Vegetable broth
- β2 tbsp Coconut oil
- β1 tsp Spicy harissaavailable at North African markets

Heat oil in a large Dutch oven over medium heat.

Add the onions, garlic, and harissa. Cook, stirring occasionally, for 5 minutes.

Add the carrots, potatoes, zucchini, and bell pepper. Cook, stirring occasionally, for 10 minutes.

Add the Tunisian spice blend, olives, and vegetable broth. Bring to a boil.
