Hwajeon with Citrus and Vegetables
A traditional Korean hwajeon pancake infused with citrus flavors and topped with a variety of colorful vegetables.
Ingredients
- β2 cups Korean rice flourpreferably pure rice flour
- β1 cup Pure waterapproximately
- β1/4 cup Green onionschopped
- β1 tablespoon Zest of 1 orangefreshly grated
- β1 tablespoon Zest of 1 lemonfreshly grated
- β2 tablespoons Citrus syrupor to taste
- β1 tablespoon Vegetable oilfor brushing
- β1/4 cup Shredded carrotsoptional
- β1/4 cup Shredded zucchinioptional

In a large bowl, mix together the Korean rice flour and pure water until a smooth batter forms.

Add the chopped green onions, orange zest, lemon zest, and citrus syrup to the batter, and mix well.

Heat a non-stick pan or griddle over medium heat.

Brush the pan with vegetable oil and pour in the batter.

Cook for 2-3 minutes or until the bottom is golden brown.

Flip the pancake and cook for an additional 1-2 minutes or until the other side is also golden brown.

Transfer the pancake to a plate and top with shredded carrots and zucchini if desired.
