Irish Bean Stew
A hearty and comforting Irish stew made with tender broad beans, smoked bacon, and a rich broth.
Ingredients
- β1 cup, fresh or 1 can, drained and rinsed broad beans
- β6 slices, diced smoked bacon
- β1 large, chopped onion
- β3 cloves, minced garlic
- β2 medium, peeled and chopped carrot
- β2 large, peeled and chopped potato
- β2 cups chicken broth
- β2 tablespoons all-purpose flour

Heat the oil in a large pot over medium heat.

Add the diced bacon and cook until browned, about 5 minutes.

Remove the cooked bacon and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrot and potato, cook for 5 minutes.

Add the broad beans, chicken broth, and browned bacon back into the pot.

Stir in the flour to thicken the stew.
