Argentinian Empanadas with Pickled Yam
A twist on traditional empanadas, filled with pickled yam and served with a side of purely Argentinean flair.

Ingredients
- β1 package Argentinian empanadashomemade or store-bought
- β1/4 cup Purely chimichurri saucestore-bought or homemade
- β1 small yam, peeled and diced Pickled yamsee pickling instructions below
- β1/4 cup, diced White onionoptional, for added flavor
- β1/4 cup, chopped Fresh parsleyoptional, for garnish
- βto taste Salt
- βto taste Black pepper

Instructions

Preheat oven to 375Β°F (190Β°C).

Cut the empanadas in half and fill each half with a spoonful of pickled yam.

Drizzle with chimichurri sauce and sprinkle with parsley, if using.
