Paella with Green Vegetables
A vegetarian paella recipe featuring green vegetables and a mediterranean twist.
Ingredients
- β1 cup ricepreferably Spanish
- β1 cup green olivespitted
- β1 can artichoke heartsdrained and chopped
- β1 cup frozen peas
- β1 cup green beanstrimmed
- β2 tablespoons olive oil
- β2 tablespoons lemon juice
- β2 cloves garlicminced
- β2 tablespoons tomato pasteoptional
- βto taste salt
- βto taste black pepper

Heat the olive oil in a large paella pan over medium-high heat.

Add the garlic and sautΓ© for 1 minute.

Add the green olives and artichoke hearts, and cook for 2 minutes.

Add the frozen peas and green beans, and cook for 3-4 minutes.

Add the rice and stir to coat with the oil and mix with the vegetables.

Add the lemon juice, tomato paste (if using), salt, and black pepper, and stir to combine.

Bring the mixture to a simmer, then reduce the heat to low and cook for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.

Remove from heat and let rest for 5 minutes before serving.
