Peruvian Causa Rellena de Pollo
A Peruvian-inspired dish consisting of a causa (potato) filling, topped with a chicken salad and garnished with Peruvian-style sauce.
Ingredients

- β1 pound chicken breast
- β1/2 red onion
- β1 hard-boiled egg
- β1/2 cup sour cream
- β2 tablespoons mayonnaise
- β1 teaspoon Dijon mustard
- β2 tablespoons Peruvian ajΓ amarillo saucesee note
Instructions

Boil the potatoes until tender. Let cool and mash.

Grill or bake the chicken until cooked through. Let cool and shred.

Chop the red onion and hard-boiled egg.

In a bowl, mix together the mashed potatoes, shredded chicken, chopped onion, egg, sour cream, mayonnaise, and Dijon mustard.

Season the mixture with salt and pepper to taste.

To assemble, spread a layer of the potato mixture on a plate or bowl, followed by a spoonful of the chicken salad.
