Roasted Lentil Pilaf Bowl
A hearty and flavorful bowl filled with the warmth of roasted spices and the comfort of lentils.
Ingredients
- β1 cup Red lentilsRinsed and drained
- β2 tablespoons Purely olive oil
- β1 teaspoon Roasted cumin powder
- β1 teaspoon Mediterranean oregano
- β1 cup Pilaf riceUncooked
- βto taste Salt
- β2 cups Water

1. Preheat the oven to 375Β°F (190Β°C).

2. In a large bowl, mix together the lentils, cumin powder, and oregano.

3. Add the olive oil and toss to coat the lentils evenly.

4. Spread the lentil mixture on a baking sheet and roast for 20-25 minutes, or until fragrant and lightly browned.

5. While the lentils are roasting, heat 2 cups of water in a large saucepan over high heat.

6. Add the uncooked rice and salt to the saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.

7. Once the lentils are done, add them to the cooked rice and toss to combine.

8. Fluff the pilaf with a fork and serve hot, garnished with chopped fresh herbs if desired.
