Grilled Korean Eggplant with Crunchy Queso

- β1 tsp Korean chili flakes (gochugaru)
- β2 tsp Brown sugar
- β2 tbsp Soy sauce
- β1 cup Qcrunchy (queso crumbles)
- β2 tbsp Olive oil
- βto taste Salt
- βnone Grill

1. Preheat grill to medium-high heat.

2. Brush eggplant slices with olive oil and season with salt, Korean chili flakes, and brown sugar.

3. Grill eggplant slices for 3-4 minutes per side, or until tender and slightly charred.

4. In a small bowl, mix together soy sauce and 1 tbsp of olive oil.
