Brazilian Paella with Walnut Crust
A twist on the classic Spanish dish, this Brazilian paella features a crunchy walnut crust and is packed with flavorful chicken and spices.
Ingredients

- β1/2 cup, chopped walnuts
- β1 pound, cut into bite-sized pieces chicken breast
- β2 tablespoons coconut oil
- β1 medium, diced onion
- β2 cloves, minced garlic
- β1 teaspoon cumin
- β1 teaspoon paprika
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Preheat oven to 375Β°F (190Β°C).

In a blender or food processor, blend chopped walnuts until finely ground.

In a large skillet, heat coconut oil over medium-high heat. Add chicken and cook until browned, about 5 minutes.

Add diced onion and minced garlic to the skillet and cook until the onion is translucent.

Stir in cumin, paprika, salt, and black pepper. Cook for 1 minute.

Add paella rice to the skillet and cook, stirring constantly, for 2-3 minutes.
