Paccheri Pasta alla Romantica
A rich and creamy paccheri pasta dish with a hint of Dutch charm, perfect for a quaint romantic dinner.
Ingredients
- β12 oz (340g) Paccheri pasta
- β4 tbsp (55g) Butter
- β8 oz (225g) Mascarpone cheese
- β1 cup (115g) Parmesan cheese
- βchopped, for garnish Fresh parsley
- βto taste Salt
- βto taste Black pepper
- β1/2 cup (55g), grated Dutch gouda cheese

Bring a large pot of salted water to a boil. Cook the paccheri pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large saucepan, melt the butter over medium heat.

Add the mascarpone cheese and stir until smooth.

Add the Parmesan cheese and stir until melted.

Stir in the Dutch gouda cheese until well combined.

Add the cooked paccheri pasta to the cheese sauce and toss until coated.

Season with salt and black pepper to taste.

If the sauce seems too thick, add a bit of the reserved pasta water.
