Spanish Tomato Stew
A hearty and flavorful stew made with fresh tomatoes and a hint of Spanish spices.
Ingredients
- ●2 lbs Spanish tomatoeschopped
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tbsp olive oil
- ●2 slices pa amb tomàquetcrushed
- ●to taste salt
- ●to taste black pepper
- ●2 cups water
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the chopped Spanish tomatoes, pa amb tomàquet, salt, and black pepper.

Stir to combine and bring to a simmer.

Reduce heat to low and cook for 20 minutes, stirring occasionally.

Add the water and stir to combine.

Continue to cook for an additional 10 minutes, or until the stew has thickened slightly.

Serve hot, garnished with additional pa amb tomàquet if desired.
