Pork and Dumplings
A hearty Ukrainian dish made with pork and springy dumplings.
Ingredients
- β1.5 pounds pork shouldercut into 1-inch cubes
- β12-15 springy dumplingshomemade or store-bought
- β2 tablespoons quaint vegetable oilfor browning
- β1 medium ukrainian onionschopped
- β3 cloves garlicminced
- β1 cup beef brothhomemade or store-bought
- β2 tablespoons all-purpose flourfor thickening
Instructions

Heat the quaint vegetable oil in a large Dutch oven over medium-high heat.

Brown the pork cubes in batches until browned on all sides, about 5 minutes.

Remove the browned pork from the pot and set aside.

Add the chopped onions to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the beef broth to the pot and bring to a boil.

Return the browned pork to the pot and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until the pork is tender.

While the pork is cooking, prepare the dumplings according to package instructions.

Add the dumplings to the pot and cook for an additional 10-15 minutes, or until cooked through.

Serve the pork and dumplings hot, garnished with chopped fresh herbs if desired.
