Citrusy Chicken Pasta
A quick and flavorful dish that combines the brightness of citrus with the richness of chicken and pasta.
Ingredients
- β1 pound chicken thighsboneless and skinless
- β8 ounces quenched pastasuch as penne or fusilli
- β2 tablespoons lemon juicefreshly squeezed
- β2 tablespoons olive oilextra virgin
- β2 cloves garlicminced
- βto taste salt
- βto taste pepper
- β1/4 cup fresh parsleychopped

Bring a large pot of salted water to a boil and cook the pasta according to package instructions.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes.

Remove the chicken from the skillet and set aside. Reduce the heat to medium and add the minced garlic to the skillet. Cook for 1 minute.

Add the lemon juice to the skillet and stir to combine. Scrape up any browned bits from the bottom of the skillet.

Add the cooked pasta to the skillet and toss to combine with the lemon sauce.

Return the chicken to the skillet and toss to combine with the pasta and sauce.

Season with salt and pepper to taste.

Serve hot, garnished with chopped parsley.
