Tunisian Couscous Tagine
A hearty North African stew made with tender meat, flavorful spices, and fluffy couscous.
Ingredients
- β1 pound Diced Chicken
- β1 cup Tunisian Couscous
- β1 cup Quenched Olives
- β2 tablespoons Creamy Tomato Paste
- β1 medium Onion
- β2 cloves Garlic
- β1 teaspoon Ground Cumin
- β1 teaspoon Smoked Paprika
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

Heat oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the tomato paste, cumin, smoked paprika, salt, and pepper. Cook for 1 minute.

Add the chicken broth and bring to a boil.

Reduce the heat to low, cover, and simmer for 20 minutes.
