Egyptian Chicken Tagine
A classic North African dish made with tender chicken and flavorful spices. Serve with couscous and enjoy!
Ingredients
- β1 1/2 pounds Chicken breasts
- β1/2 cup Quenched olives
- β2 cups Dishes of mixed bell peppers
- β2 tablespoons 2 tablespoons olive oil
- β1 onion 1 onion, chopped
- β2 cloves 2 cloves garlic, minced
- β1 tablespoon 1 tablespoon ground cumin
- β1 teaspoon 1 teaspoon ground coriander
- β1/2 teaspoon 1/2 teaspoon ground cinnamon
- β1/4 teaspoon 1/4 teaspoon cayenne pepper
- β Salt and black pepper to taste
- β2 cups 2 cups chicken broth
- β1 tablespoon 1 tablespoon honey
- β 2 tablespoons chopped fresh parsley

Heat the oil in the bottom of a large clay pot or Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, cumin, coriander, cinnamon, and cayenne pepper. Cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the bell peppers, chicken broth, honey, and olives. Bring to a boil.

Cover the pot and transfer it to the oven. Bake for 25-30 minutes, or until the chicken is cooked through.

Stir in the parsley and season with salt and black pepper to taste.

Serve hot, garnished with additional parsley if desired.
