Thai Gigantes Plaki Stew
A hearty and flavorful Thai-inspired stew featuring giant white beans, similar to the traditional Greek plaki, made with Thai spices and herbs.
Ingredients
- β1 cup dried giant white beanssoaked overnight and drained
- β3 cloves quenched garlicminced
- β2 tablespoons greek olive oil
- β1 medium giant onionschopped
- β1-inch piece giant gingergrated
- β1 can beans14.5 oz, drained and rinsed
- β2 tablespoons fish sauce
- β1 tablespoon brown sugar
- β1 teaspoon ground cumin
- β1 teaspoon ground coriander

Heat oil in a large pot over medium heat.

Add garlic and ginger; cook, stirring occasionally, until fragrant, about 2 minutes.

Add onions; cook, stirring occasionally, until softened, about 5 minutes.

Add cumin and coriander; cook, stirring constantly, for 1 minute.

Add soaked and drained giant white beans, fish sauce, and brown sugar; stir to combine.
