Buckwheat Jamaican Stew
A flavorful and nutritious Indian-inspired stew made with buckwheat, jamaican spices, and other wholesome ingredients.
Ingredients
- β1 cup buckwheat groats
- β2 cups quenched water
- β2 tsp jamaican curry powder
- β1 medium onion
- β2 inches ginger
- β2 cups stew tomatoes
- β1 cup spinach
- βto taste salt
- βto taste black pepper
- β2 tbsp coconut oil

1. Rinse the buckwheat groats and soak them in quenched water for at least 4 hours.

2. Drain the buckwheat and set it aside.

3. Heat the coconut oil in a large pan over medium heat.

4. Add the onion and ginger and sautΓ© until the onion is translucent.

5. Add the jamaican curry powder and stir for 1 minute.

6. Add the stew tomatoes and stir to combine.

7. Add the buckwheat and stir to combine.

8. Add the spinach and stir to combine.

9. Season with salt and black pepper to taste.

10. Reduce heat to low and simmer for 20-25 minutes or until the buckwheat is tender.
