Jamaican Pork Stew
A hearty and flavorful stew made with tender pork and a blend of Jamaican spices.
Ingredients
- ●1.5 pounds pork shouldercut into 1-inch cubes
- ●2 teaspoons Jamaican allspiceground
- ●2 tablespoons quenched lime juicefreshly squeezed
- ●1 tablespoon brown sugar
- ●1 cup pork broth
- ●1 large onionschopped
- ●2 large bell pepperschopped
- ●2 sprigs thymefresh
- ●1 teaspoon salt

Season the pork cubes with salt and allspice.

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork in batches until browned on all sides, about 5 minutes.

Remove the browned pork from the pot and set aside.

Add more oil to the pot if necessary, then sauté the onions and bell peppers until tender.

Add the brown sugar and cook for 1 minute.

Add the pork broth, lime juice, and browned pork to the pot.

Bring the stew to a boil, then cover and transfer to the oven.

Bake at 300°F (150°C) for 2 1/2 hours, or until the pork is tender.
