Pan-Seared Monkfish Skillet
A quick and flavorful Portuguese-inspired dish featuring seared monkfish and a variety of vegetables.
Ingredients
- β4 monkfish filletsFresh or frozen
- β1 skilletLarge, oven-safe
- β2 tablespoons olive oilExtra virgin
- β1 medium onionChopped
- β2 cloves garlicMinced
- β2 tablespoons lemon juiceFreshly squeezed
- β1 pint cherry tomatoesHalved
- β1/4 cup fresh parsleyChopped
- βto taste salt

Preheat the oven to 400Β°F (200Β°C).

Season the monkfish fillets with salt and black pepper.

Heat 1 tablespoon of olive oil in the skillet over medium-high heat.

Add the onion and garlic; cook until the onion is translucent, about 3-4 minutes.

Add the monkfish fillets; cook for 2-3 minutes per side, or until browned.

Transfer the skillet to the preheated oven and cook for 8-10 minutes, or until the monkfish is cooked through.

While the monkfish cooks, combine the cherry tomatoes and lemon juice in a bowl.
