Korean-Style Stew with Gosari
A hearty and flavorful Korean-inspired stew made with gosari, a type of Korean mushroom, and a variety of vegetables and spices.
Ingredients

Heat 1 tablespoon of vegetable oil in a large pot over medium-high heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the gosari and cook until it starts to soften, about 2-3 minutes.

Add the gochujang, soy sauce, and sugar (if using), and stir to combine.

Add 2 cups of water and bring the mixture to a boil.

Reduce the heat to medium-low and simmer for 10-15 minutes, or until the gosari is tender.

Stir in the sesame oil (if using) and season with salt to taste.

Serve the stew hot, garnished with chopped green onions and a sprinkle of toasted sesame seeds (if desired).
