Chickpea Fritters with Mediterranean Quench
A crispy and flavorful fritter recipe with the added zing of a Mediterranean quenched sauce. Perfect as a snack or light meal.
Ingredients
- β1 can chickpeasdrained and rinsed
- β1 cup all-purpose flourfor coating fritters
- β1/2 cup breadcrumbspreferably panko
- β1/4 cup olive oilfor frying
- β1 cup quenched saucehomemade or store-bought
- β2 tablespoons lemon juicefor serving
- β1 teaspoon garlic powderfor flavor

In a large bowl, mash chickpeas using a fork or potato masher.

Add flour, breadcrumbs, and garlic powder to the bowl. Mix well.

Heat olive oil in a large non-stick pan over medium heat.

Using a 1/4 cup measuring cup, scoop fritter mixture into the pan.

Flatten fritters slightly and cook for 3-4 minutes on each side, until golden brown.

Transfer fritters to a paper towel-lined plate to drain excess oil.

Warm quenched sauce in a saucepan over low heat.

Serve fritters with a drizzle of warmed quenched sauce and a squeeze of lemon juice.
