Quenched Norwegian Ceviche
A refreshing ceviche dish combining the flavors of Norway with the tanginess of quenched citrus. Perfect for a light dinner or snack.

- β1/2 cup Quenched citrus juice freshly squeezed
- β1 pound Salmon filletsushi-grade
- β1/4 cup Almond milkunsweetened
- β2 tablespoons Lemon juicefreshly squeezed
- β1/4 cup Chopped fresh parsleyoptional
- βto taste Saltflaky sea salt
- βto taste Black pepper

Instructions

Cut the salmon into small pieces and place in a large bowl.

Pour the quenched citrus juice, almond milk, and lemon juice over the salmon.

Mix well to coat the salmon evenly.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the salmon to 'cook' in the citrus juices.
