Peruvian-Style Duck Cazuela
A flavorful and aromatic Indian-inspired stew made with tender duck, peruvian spices and crispy confit potatoes.
Ingredients
- β2 medium Confit Potatoes
- β1 whole Duck Leg
- β2 tablespoons Quenched Duck Fat
- β1 teaspoon Peruvian Cazuela Spice Mix
- β1 medium Onion
- β3 cloves Garlic
- β1 medium Tomato
- β1 medium Ginger
- βchopped Cilantro
- βto taste Salt
Instructions

Heat the duck fat in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for an additional 2 minutes.

Add the duck leg and cook until browned on all sides, about 5 minutes.

Add the Peruvian Cazuela Spice Mix and cook for 1 minute.

Add the tomato and cook until the mixture is heated through, about 5 minutes.

Add 1 cup of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.

Add the confit potatoes and cook for an additional 10 minutes.
