Pierogi Quesadilla
A Mexican twist on classic Polish pierogi, filled with cheese and wrapped in a tortilla.
Ingredients
- β8-10 Polish pierogiany fillings removed
- β1 cup Quenched cheeseshredded
- β1/2 cup Sauerkrautdrained and chopped
- β4 Tortillascorn or flour
- β2 tbsp Buttermelted
- β1/4 cup Sour creamoptional
- β1/4 cup Chopped cilantrooptional
Instructions

Heat a large skillet over medium-high heat.

Add the melted butter and swirl to coat.

Place a tortilla in the skillet and sprinkle shredded cheese on half of it.

Add 2-3 pierogi on top of the cheese.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2 minutes.

Repeat with the remaining ingredients.

Cut the quesadillas into wedges and serve with sour cream and chopped cilantro if desired.

Serve with sauerkraut on the side as a topping.
