Charred Leek Samosas
A twist on the classic Indian samosa, this recipe incorporates the sweet and smoky flavor of charred leeks. Quick to make and delicious to eat.

- β8-10 pieces Quick Indian FlatbreadFor serving
- β1 package Samosa PastryThawed
- β1/4 cup CilantroChopped
- β1 tsp Garam Masala
- βto taste Salt

1. Preheat the oven to 425Β°F (220Β°C).

2. Trim the leeks and place them on a baking sheet. Drizzle with oil and season with salt. Roast in the oven for 20-25 minutes, or until charred and caramelized.

3. Meanwhile, prepare the samosa filling by mixing together the cilantro and garam masala.

4. Once the leeks are done, let them cool slightly. Then, chop them into small pieces and add them to the filling mixture. Mix well.

5. Assemble the samosas by placing a tablespoon of the filling mixture onto the center of a samosa pastry square. Brush the edges with water and fold the pastry into a triangle, pressing the edges to seal.

6. Brush the tops of the samosas with oil and place them on a baking sheet. Bake in the oven for 15-20 minutes, or until crispy and golden brown.

7. Serve the samosas warm with a side of quick Indian flatbread for dipping.
