Tabbouleh Salad
A refreshing and healthy salad originating from the Middle East, made with parsley, tomatoes, mint, and bulgur.

- β1 bunch Parsleycurly-leaf parsley
- β1 cup Bulgurfine or medium grind
- β2 medium Tomatoesdiced
- β1/4 cup Mintfresh leaves, chopped
- β2 tablespoons Lemon juice
- β1 tablespoon Olive oil
- βto taste Salt

1. Rinse the parsley and mint leaves and pat dry with a paper towel.

2. In a large bowl, combine the bulgur, parsley, mint, and tomatoes.

3. In a small bowl, whisk together the lemon juice and olive oil.

4. Pour the dressing over the salad and toss to combine.

5. Season with salt to taste.

6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
