Venezuelan Plantain Empanadas
A classic Venezuelan dish of crispy empanadas filled with sweet plantains and served with a side of salsa or guacamole.
Ingredients
- β2 PlantainsGreen or ripe
- β1 package Venezuelan Empanada DoughStore-bought or homemade
- β1/4 cup Quick CheeseOptional, for extra flavor
- β1/4 cup Olive OilFor brushing empanadas
- βto taste SaltFor added flavor
- βto taste PepperFor added flavor

Preheat oven to 375Β°F (190Β°C).

Peel the plantains and slice them into 1-inch pieces.

Heat the olive oil in a large skillet over medium heat.

Add the plantains to the skillet and cook until they're tender and lightly browned.

Season the plantains with salt and pepper to taste.

Roll out the empanada dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

Place a tablespoon or two of the plantain mixture onto the center of each dough circle.

Fold the dough in half to form a half-moon shape and press the edges together to seal the empanada.

Brush the tops of the empanadas with olive oil.

Bake the empanadas in the preheated oven for 15-20 minutes, or until they're golden brown.
