Crispy Fried Spanish Tortas

Ingredients
- β1/4 cup Lardfor frying
- β4 BreadSpanish-style bolillo or Mexican telera
- β1/4 pound ChorizoMexican-style chorizo, sliced
- β2 cups, shredded Monterey Jack Cheese
- β1/4 cup, chopped Fresh Cilantro
- βto taste Salt
- βto taste Black Pepper

Heat lard in a skillet over medium-high heat.

Fry the bread until golden brown, about 2-3 minutes per side.

Remove the bread from the skillet and set aside.

Add chorizo to the skillet and cook until browned, about 3-4 minutes.

Add the cooked chorizo to the fried bread.
