Vietnamese Chicken Crepes
A delicious French-inspired Vietnamese dish made with crispy crepes and savory chicken filling.
Ingredients
- β1 pound Chicken breastboneless, skinless
- β8-10 Crepesstore-bought or homemade
- β1/2 pound Shrimppeeled and deveined
- β1/4 cup Vegetable oilfor frying
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β2 tablespoons Soy sauceoptional
- β1 tablespoon Fish sauceoptional
- β1/4 cup Sliced scallionsfor garnish

Heat 1/4 cup of vegetable oil in a large skillet over medium heat.

Add the chopped onion and minced garlic and cook until softened, about 3-4 minutes.

Add the shrimp and cook until pink and fully cooked, about 2-3 minutes.

In a blender or food processor, combine the cooked shrimp mixture, chicken breast, soy sauce, fish sauce, and 1 tablespoon of water.

Blend until smooth and set aside.

Cook the crepes according to package instructions or until lightly browned.

Place a crepe on a flat surface and spoon about 1/4 cup of the chicken-shrimp mixture onto the center of the crepe.

Fold the crepe in half over the filling and repeat with the remaining crepes and filling.

Serve the crepes hot, garnished with sliced scallions and a side of your favorite dipping sauce.
