Galician Stew Potato Fritters
A vegan twist on traditional Galician Stew, served as crispy fritters.

- β2 large Potatoespeeled and grated
- β1 cup Quick oatsrolled
- β1 can Galician stewdrained and rinsed
- β1/4 cup Vegan egg replacementflaxseed or chia seed mixture
- βto taste Salt
- βto taste Black pepper
- β1/4 cup Vegan oilfor frying

Preheat the oil in a deep frying pan to 350Β°F (175Β°C).

In a large bowl, combine the grated potatoes, oats, stew, egg replacement, salt, and pepper. Mix well.

Using a spoon, drop small portions of the mixture into the hot oil, flattening slightly with a spatula.

Fry the fritters for 4-5 minutes on each side, or until golden brown and crispy.
