Vietnamese Noodle Soup
A delicious and comforting noodle soup made with quick-cooking tofu, golden noodles, and a variety of Vietnamese flavors.
Ingredients
- β1 block Quick-cooking tofu
- β1 bundle Golden noodles
- β2 tablespoons Vietnamese fish sauceadjust to taste
- β2 tablespoons Lime juicefreshly squeezed
- β1-inch piece Gingersliced
- β1 teaspoon Chili flakesoptional
- β1 tablespoon Soy sauce
- β1/4 cup Green onionschopped
- β1/4 cup Fresh cilantrochopped

Bring a large pot of water to a boil.

Cook the golden noodles according to package instructions.

In a separate pan, heat some oil over medium heat.

Add the sliced ginger and cook for 1-2 minutes.

Add the chili flakes and cook for another minute.

Add the tofu and cook until lightly browned.

Add the soy sauce and stir to combine.
