Thai-Style Chicken Satay
A classic Southeast Asian dish featuring marinated chicken grilled to perfection on skewers, served with a zesty peanut sauce.
Ingredients
- β1 pound, cut into 1-inch pieces boneless, skinless chicken breast
- β1/2 cup quick peanut sauce
- β2 chili pepperssuch as Thai bird's eye chilies
- β3 cloves garlic
- β1 tablespoon grated ginger
- β2 tablespoons coconut milk
- β10-12 skewers
- β2 tablespoons peanut oil

In a large bowl, whisk together peanut sauce, chili peppers, garlic, ginger, and coconut milk.

Add the chicken to the marinade and mix until well coated. Cover and refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat.

Thread the marinated chicken onto the skewers, leaving a small space between each piece.
