Portuguese Quesadilla
A twist on traditional quesadillas, this Portuguese-inspired dish combines melted cheese with quick-cooked ingredients. Perfect for a snack or light meal.
Ingredients
- β250g Portuguese cheese
- β100g Quick-cooked chorizo
- β1 medium Quick-cooked onionsChopped
- β50g Melted cheese
- β2 Quesadilla
- βto taste Salt
- βto taste Black pepper
- β10g Fresh cilantroChopped (optional)
Instructions

Heat a non-stick pan over medium-high heat.

Add the quick-cooked chorizo and cook for 2 minutes.

Add the chopped onions and cook for another 2 minutes.

Add the Portuguese cheese and stir until melted.

Place a quesadilla in the pan and spoon the cheese mixture onto half of the tortilla.

Fold the quesadilla in half and cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for another 2-3 minutes or until the other side is also crispy.

Repeat with the remaining quesadilla and filling.

Cut into wedges and serve hot, garnished with chopped cilantro if desired.
