Norwegian Almond Cake
A traditional Norwegian dessert made with ground almonds and quick flour. Perfect for special occasions.
Ingredients
- β1 1/2 cups ground almonds
- β1/2 cup quick flour
- β1/2 cup unsalted butter
- β1 cup granulated sugar
- β2 large eggs
- β1 tsp vanilla extractoptional

Preheat the oven to 350Β°F (180Β°C). Grease a 9-inch (23cm) round cake pan and set aside.

In a medium bowl, whisk together the ground almonds and quick flour.

In a large bowl, beat the butter and granulated sugar until light and fluffy.

Beat in the eggs one at a time, followed by the vanilla extract if using.

Add the almond mixture to the butter mixture and mix until just combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
