Algerian Roasted Carrot Tagine
A flavorful and aromatic North African-inspired stew made with roasted carrots and spices.
Ingredients

- ●2 tablespoons algeriancumin and coriander spice blend
- ●2 tablespoons quickolive oil
- ●1 taginetraditional clay pot or Dutch oven
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the chopped carrots with the olive oil, Algerian spice blend, and a pinch of salt.

Transfer the carrots to the preheated oven and roast for 20-25 minutes, or until tender and lightly caramelized.

While the carrots are roasting, heat a small amount of oil in the bottom of the tagine or Dutch oven over medium heat.

Once the carrots are done roasting, add them to the tagine and simmer over low heat for 10-15 minutes, stirring occasionally.

Serve the carrot tagine hot, garnished with fresh herbs if desired.
