Australian Lentil Bowl
A hearty and nutritious bowl filled with Australian lentils, roasted vegetables, and a hint of spices.
Ingredients
- β1 cup Australian lentils
- β2 medium Carrots
- β2 medium Sweet potatoes
- β1 large Red bell pepper
- β1 medium Onion
- β2 tablespoons Quick olive oil
- βto taste Salt
- βto taste Black pepper
- β1 teaspoon Chili powder
- β1 teaspoon Garlic powder

Preheat the oven to 400Β°F (200Β°C).

Peel and chop the sweet potatoes and carrots into 1-inch cubes.

Place the sweet potatoes and carrots on a baking sheet, drizzle with 1 tablespoon of quick olive oil, and season with salt and black pepper.

Roast in the oven for 20-25 minutes, or until tender.

While the sweet potatoes and carrots are roasting, heat 1 tablespoon of quick olive oil in a large skillet over medium heat.

Add the sliced onion and cook for 5-7 minutes, or until softened.

Add the sliced red bell pepper and cook for an additional 2-3 minutes.

Stir in the chili powder and garlic powder.

Add the Australian lentils to the skillet and cook for 1-2 minutes, until heated through.

To assemble the bowls, place 1/2 cup of the roasted sweet potatoes and carrots in the bottom of a bowl, followed by the lentil mixture.
