Barramundi Pie
A classic British dish featuring roasted barramundi in a creamy cottage pie.
Ingredients
- β4 barramundi fillets
- β250g cottage cheese
- β2 tbsp all-purpose flour
- β2 tbsp unsalted butter
- β250ml milkwhole or semi-skimmed
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 tsp salt
- β1 tsp pepper

Preheat the oven to 180Β°C (350Β°F).

Season the barramundi fillets with salt and pepper.

Heat the butter in a pan over medium heat. Add the chopped onion and cook until softened.

Add the minced garlic and cook for 1 minute.

Add the barramundi fillets and cook for 2-3 minutes on each side, or until cooked through.

In a separate pan, melt the butter over medium heat. Add the flour and cook for 1 minute.

Gradually add the milk, whisking continuously to avoid lumps.

Bring the mixture to the boil, then reduce the heat and simmer for 2 minutes.

Stir in the cottage cheese until melted and smooth.

Transfer the barramundi fillets to a baking dish.

Pour the cottage cheese mixture over the top of the fish.

Bake in the preheated oven for 20-25 minutes, or until golden brown.
