Roasted Peanut Tagine Chicken
A flavorful North African-inspired dish with roasted chicken, peanuts, and spices.
Ingredients
- β4 chicken breastsboneless and skinless
- β1/2 cup peanutschopped
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp cuminground
- β1 tsp corianderground
- β1 tsp paprikasmoked
- β1 tsp saltto taste
- β1 tsp pepperto taste
- β2 tbsp olive oilfor cooking
- β2 tbsp lemon juicefreshly squeezed

Preheat oven to 425Β°F (220Β°C).

Rinse the chicken breasts and pat them dry with paper towels.

In a small bowl, mix together the cumin, coriander, paprika, salt, and pepper.

Rub the spice mixture all over the chicken breasts.

Heat the olive oil in a large oven-safe skillet over medium-high heat.

Sear the chicken breasts for 2-3 minutes on each side, or until browned.

Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through.

While the chicken is cooking, toast the peanuts in a small dry skillet over medium heat, stirring frequently, until fragrant.

Remove the skillet from the oven and stir in the toasted peanuts, chopped onion, minced garlic, and freshly squeezed lemon juice.
