Peruvian Anticuchos Recipe
Delicious grilled beef heart skewers marinated in a mix of Peruvian spices and served with a side of roasted tomatoes.
Ingredients
- β1 pound beef heartmake sure to cut into 1-inch pieces
- β1/4 cup red wine vinegar
- β2 tablespoons olive oil
- β2 cloves garlicminced
- β1 teaspoon aji amarillo pepperdiced
- β1/2 teaspoon cuminground
- β1/4 teaspoon peruvian anticuchos spice blendavailable at latin markets
- β1 cup quick-roasted tomatoes

In a large bowl, whisk together vinegar, olive oil, garlic, aji amarillo pepper, cumin, and peruvian anticuchos spice blend.

Add the beef heart pieces to the marinade and refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat.

Thread the marinated beef heart pieces onto skewers.

Grill the skewers for 5-7 minutes per side, or until they reach an internal temperature of 145Β°F.
