A hearty beet-based soup originating from Ukraine, served with a dollop of sour cream and a sprinkle of chopped fresh dill.

- β2 medium Carrotspeeled and grated

- β1 can (14.5 oz) Canned Tomatoesdiced

- β1 cup Sour Creamfor serving
