Monsoon Chicken Stew
A flavorful Indian-inspired stew made with tender chicken thighs and a blend of aromatic spices.
Ingredients
- β1 pound chicken thighsbone-in, skin-on
- β1 cup saucystore-bought or homemade
- β2 tablespoons monsoonIndian spice blend
- β1 teaspoon americanground cumin
- β1 teaspoon quickground coriander
- β2 cups stewchicken broth
- β1 cup wateras needed
- β2 tablespoons ghee or oilfor browning chicken

Heat oil in a large Dutch oven over medium-high heat.

Brown the chicken thighs on all sides, about 5 minutes.

Remove the chicken from the pot and set aside.

Add a bit more oil if needed, then add the monsoon spice blend and cook for 1 minute.

Add the saucy and cook for 1 minute, stirring constantly.

Add the stew and water to the pot, scraping up any browned bits from the bottom.

Return the chicken to the pot and bring the mixture to a boil.

Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the chicken is cooked through.
